The EAT MORE CHICKEN Parmesan

So, you’re getting back late from work (maybe the mall, lets be honest) and forgot you have some people coming over later. You want to throw together something impressive, but not too hard. That’s where The Eat More Chicken Parmesan comes in! It’s super simple (you can even use pre-made sauce) and tastes delicious.
Now I will say, despite its simplicity, you may want to make it once before. It seemed like a lot the first time, but by the second, it’s basically like making cereal… Somewhat messy cereal (not going to lie), but cereal. That being, a helping hand will prove greatly appreciated.

Tomato Sauce
4 Tbsp. grapeseed or Avocado oil
6 Roma tomatoes, diced
2 cans 28 Oz. crushed tomatoes
4 tablespoons basil chiffonade
3 garlic cloves
1/2 yellow onion
Chicken Parmesan
Gradate Parmesan cheese
+/-1 Tbsp. Parsley finely chopped
+/-1 Tbsp. Fresh oregano finely chopped
2 Cups Panko Breadcrumbs
1 tsp. Paprika
3-4 Whole eggs
All-purpose flour
4-8 chicken Cutlets
Grapeseed or avocado oil for frying
Tomato Sauce to spread on top
Slices of fresh Mozzarella
Spaghetti
Noodles of course
Parsley finely chopped
Basil chiffonade
Gradate Parmesan cheese
*APPROXIMATE EVERYHTING TO YOUR LIKING. NOO NEED TO MEASURE, OTHER THEN TOMATO SAUCE
Tomato Sauce
1. Heat 4 Tbsp. Grapeseed/Avocado oil in a saucepan (medium heat).
2. Add onion and garlic.
3. When onion appears transparent, Add Roma tomatoes and cook for 5 minutes.
4. Now add canned tomatoes, lower heat, and simmer. Cook for an additional 20 minutes or so (until sauce slightly thickened).
Breading Chicken
1. Create an assembly line consisting of 3 large bowls.
-1st Bowl, seasoned flour with salt and pepper.
-2nd Bowl, Whisked eggs.
-3rd Bowl, Panko, parmesan cheese, chopped parsley, chopped fresh oregano, and paprika all mixed together.
2. Roll/flatten out chicken cutlets
3. Season each cutlet with salt and pepper.
4. Coat through the assembly line. Flour, then Egg, then Panko mix (1-3).
Cooking Chicken
1. Heat oven to broil
2. Heat Grapeseed/avocado oil in a large sauté pan (medium-high heat).
3. Place 1-2 breaded cutlets in the hot oil.
4. Cook on each side for 2-3 minutes each (or until Golden Brown).
5. Transfer to an oven pan and add tomato sauce on Top of the chicken.
6. Finally, place mozzarella on top and place in oven until cheese is melted.
Spaghetti
1. Cook your pasta however you typically do.
2. Then just Coat with the sauce, salt, pepper, chopped parsley, chopped basil, and grated parmesan cheese.
