If you love sweet potatoes and you haven't had this, you're missing out! It's super straightforward, easy as 1-2-3 (literally), and tastes great. The hardest part is probably just peeling and cubing the potatoes!
6 sweet potatoes, peeled and cubed (The purple ones might be cool if you can find them)
3/4 cup of dairy milk (have to clarify these days)
1/2 cup butter
3/4 cup maple syrup (Yes, it HAS to be maple)
1. Pour the peeled and cubed potatoes into a large pot of salty boiling hot water. I recommend using a large spoon if you don't care to get splashed. leave them there 20-30 minutes until soft enough to blend (or mash) up.
2. Drain all the water and place in a large bowl and start blending or mashing (depends if you want a workout). Slowly add the milk, not adding to much on each pour, and blend in between. Add the butter and syrup as well. Keep finessing until it tastes perfect. If you get stuck on what it needs, just ask yourself...
